Most Adelaide hospitality employees are covered by either the Hospitality Industry (General) Award 2020 or the Restaurant Industry Award 2020. Both awards set minimum rates for different classifications, penalty rates for evenings, Saturdays, Sundays, and public holidays, casual loading of 25%, split-shift allowances, and overtime provisions. The correct classification of each employee role is essential, as applying the wrong classification or failing to apply penalty rates creates Fair Work liability for the employer. We review classifications for every new hospitality payroll client before processing the first pay run.
Most basic unprocessed food items are GST-free in Australia. However, prepared food, hot food, and food consumed on premises at a cafe or restaurant is taxable and attracts GST at 10%. Alcoholic beverages are always subject to GST regardless of the context. The distinction between GST-free food and taxable prepared food is a specific area the ATO audits in hospitality businesses. If your POS system is not correctly configured to separate GST-free and taxable items, your BAS will be incorrect. We review POS GST settings for all new hospitality bookkeeping clients.
Tips paid directly by a customer to an employee with no employer involvement are generally not assessable income for the employer and are not treated as wages for superannuation purposes. Tips collected by the employer and distributed to staff are treated as wages and are subject to PAYG withholding and superannuation guarantee contributions. Service charges added to the bill by the business are always employer income and are subject to GST. See the ATO's guidance on tips and gratuities for the complete framework. Incorrect tip treatment is one of the most common audit triggers in hospitality businesses.
Fringe Benefits Tax applies to certain non-cash benefits provided to employees in their capacity as employees. In hospitality, the most common FBT triggers are meals provided to employees at social functions or as regular benefits, accommodation provided to staff, and vehicles made available for private use. The distinction between a deductible staff meal and an FBT-attracting entertainment benefit depends on cost per head and the circumstances of the meal. See the ATO's FBT guidance for the rules. We assess FBT exposure for every new hospitality client.
Delivery platforms, including Uber Eats, DoorDash, and Menulog, remit a net payout after deducting their commission. For BAS purposes, you must report the gross sale value (including GST) as income, not the net payout. The platform commission is a separate deductible expense. Failing to gross up delivery platform sales for GST purposes understates your GST liability on the BAS and creates a risk of ATO adjustment. We reconcile all delivery platform sales correctly in your quarterly BAS from your Xero records.
Food cost percentage is the ratio of ingredient costs to revenue from those sales, expressed as a percentage. For a cafe or restaurant, the target food cost percentage typically sits between 28% and 35%, depending on the menu type and price point. A food cost percentage outside this range indicates supplier price increases, portion inconsistency, staff meals, wastage, or unmanaged theft.
